A new food truck from chef Karl Gregg–the founder of once-prominent Powell Street butcher shop, Big Lou’s–is getting ready to make its debut in Vancouver next month, specializing in slow-cooked, family-style southern barbecue.
After spending the better part of the past year testing a slew of wood-smoked recipes in his backyard smoker, chef Gregg has announced that Rosie’s BBQ and Smokehouse will hit the streets on June 20, offering an array of locally-sourced barbecue comfort foods like brisket, baby back ribs, pork sausages, and more.
In keeping with the Texas barbecue family-style theme, Rosie’s will also offer a wide range of classic made-from-scratch sides, such as smoked green beans, cherry Kool-Aid pickles, and banana pudding, along with traditional southern refreshments like semi-sweet tea.
Although the complete summer schedule is still in the works, Rosie’s is currently planning pop-up collaborations with a selection of popular breweries, including Main Street, Parkside, Strange Fellows, and Slow Hand.
