Lauren Mote of Four Seasons in Vancouver came up with this version of the piña colada for Pride Crawl Fundraiser for Dr. Peter AIDS Foundation. It's inspired by the hill region just outside the Johannesburg, South Africa that's perfect for wildlife and marula fruit. Look for it at YEW Seafood and Bar.
1 ½ oz. Havana 3 year old white rum
1/2 oz. Amarula Cream
2 oz. fresh pineapple juice
3 barspoon Boiron coconut puree
2 dashes Bittered Sling Plum & Rootbeer Bitters, plus more for garnish
1 slice pinapple
1 mint leaf, for garnish
Dry shake all ingredients together, add ice and shake hard to incorporate.
Strain over fresh, crushed ice in a sling glass, lined with thin, half pineapple circle and mint with a pick, a paper umbrella pick and straw.
Top the cocktail with 1 dash of rootbeer bitters for a little colour.
