We thought we had seen it all when it came to making pancakes at home, but Ricardo Larrivée's new cookbook Multicooker Everything: Delicious Recipes for Your Multicooker, Pressure Cooker or Instant Pot has proven us wrong.

Collectively, the 70+ recipes found in his latest release aim to showcase the versatility of countertop kitchen appliances.

This simple recipe for a giant pancake (that serves up to 6!) is certainly no exception. All you need to be shaken to your weekend breakfast core is a pressure cooker or multi-cooker.

If you like gigantic, fluffy pancakes as much as we do, you're going to want to try your hand at making this giant pressure cooker pancake.

How to make a pressure cooker pancake

2 cups all-purpose flour
2 tsp baking powder
2 eggs
1/4 cup sugar
1 tsp good quality vanilla extract
1 3/4 cups whole milk
softened butter, enough to butter pressure cooker container

Butter the container of your pressure cooker generously.

In a bowl, combine the flour and baking powder.

In another bowl, whisk together the eggs, sugar and vanilla using an electric mixer until the mixture triples in volume, about 5 minutes. With the machine running on low speed, add the dry ingredients, alternating with the milk, then mix until the batter is smooth.

Pour the batter into the container. Secure the lid and set to Low pressure. Set the cooking time to 30 minutes.

When ready, depressurize your pressure cooker manually, then remove the lid. Using oven mitts, remove the container of the pressure cooker. Place a plate upside down over the container. Flip the pancake onto the plate while it’s hot.

Delicious served with maple syrup, fresh blueberries or blueberry sauce.
