Did you over indulge this long weekend? If so, you can get back into your usual healthy eating habits with this breakfast from Hopscotch, a health focused fast-casual restaurant in Toronto.
4 oz. spinach
4 oz. cooked and cooled white or red quinoa
2 oz. cooked sweet potato, diced
your favourite salad dressing, to taste (we used maple balsamic)
2 oz. cucumber, diced
1/2 avocado, diced
1 hard-boiled egg, sliced
3 strips bacon, cooked until crispy
In a serving bowl, mix together spinach, quinoa, some sweet potato and small amount of maple balsamic in one bowl and toss well.
In a separate bowl, mix avocado, cucumber, and the rest of the sweet potato. Take ingredients from second bowl and put into the first. Top with cooked bacon and sliced egg and add more dressing if desired.
