Whether you subscribe to the "new year, new me" mentality or you've always been on a fairly healthy diet, it's always a good time to include more fresh and locally-sourced ingredients in your diet. Having said that, it's not always easy to find these options on the go. To help make healthy choices more accessible, brothers and entrepreneurs Aiden and Wyatt Booth brought Hopscotch, their health- and community-focused fast-casual eatery to downtown Toronto from London, Ontario, offering dishes like rice and grain bowls, salads and smoothies (in eco-friendly packaging and utensils).

If you haven't visited them in Scotia Plaza yet, make this kimchi bowl at home and get a taste of what Hopscotch is about.

3/4 cup cooked brown rice
1/2 cup bean sprouts
1 cup shredded cabbage
1/4 cup shredded carrots
1/2 cup diced cucumber
1/3 cup shelled edamame
1 to 2 green onion, sliced thinly
1 to 2 radish, julienned
3 1/2 oz. cooked chicken, cubed
sesame ginger dressing, to taste
chopped cilantro, to taste
nori strips, to taste
gochujang mayo

Add Brown Rice to bowl

Arrange bean sprouts, cabbage, carrots, cucumber, edamame, scallions, radish and chicken over the rice.

Toss with sesame ginger dressing, then top with cilantro and nori.

Drizzle gochujang mayo on top.

Gochujang mayo

2 1/2 cup mayonnaise
5 tsp gochujang
2 tsp sriracha

In a small bowl, whisk ingredients together until there are no lumps.
