A buzzworthy barbecue concept from a trio of acclaimed restaurateurs is getting ready to open its doors in Vancouver’s Mount Pleasant neighbourhood next week, offering up authentic Austin-style barbecue in an inviting room.
Taking over the space formerly occupied by storied institutions Foundation and Rumpus Room, Slim’s BBQ is the result of a collaboration between industry veterans Christina Cottel and Shoel Davidson (Dixie’s BBQ, Gringo) and David Dunprey (Emerald, Key Party, The Narrow).
“Moving to Main Street makes our barbecue more accessible,” explains Cottell. “We have made every effort to ensure that our guests have a safe and comfortable dine-in experience, and the new location is also more central for pickup and delivery.”
Picking up where Dixie’s left off (after closing in 2019), Slim’s BBQ will feature an array of traditional smokehouse offerings, such as deep-smoked beef brisket, pork butt, ribs, and fried chicken, along with an expansive selection of classic comfort food accompaniments like buttermilk biscuits, smoked brisket beans, and serrano-cheese spinach.
The beverage program at Slim’s aims to emphasize the eatery’s laid back philosophy with easy-drinking cocktails primarily created with whiskey, tequila, and mezcal. Naturally, a selection of craft beers will be available as well, all of which will be sourced within a six-block radius of the concept.
Slim’s BBQ opens in Vancouver on February 1 and will be open daily for dine-in, takeout, and delivery from noon to 10 p.m.
