Chef Chris Shaften, owner of Taste First private chef services and season 3 contestant on Top Chef Canada, demonstrates the proper techiques of making a gastrique. The maple syrup and spices in this variation is perfect in a vinaigrette that's paired with root vegetable in the fall and winter.
