This week, the team behind Vancouver’s award-winning Uva Wine and Cocktail Bar debuted a new Negroni-inspired menu that showcases six unique takes on the classic Italian cocktail.
A conventional Negroni typically consists of gin, vermouth, and Campari, but Uva’s new lineup of Negroni-themed cocktails take the traditional format to the next level.
All six variations bring something unique to the table, but some standouts include the Summer Ruby (Bombay Sapphire, Aperol, Noilly Prat Ambré, rhubarb bitters), the Stella (star anise-infused Flor de Caña 5 yr, mango-infused Campari, bitter bianco) and the Oscuro (Bombay Sapphire infused with active charcoal, Punt e Mes, Aperol).
Uva and its sister restaurant Cibo Trattoria have also developed a brand new Aperitivo Hour menu that features special offers on a variety of wines and house cocktails, along with a range of shareable dishes such as gnocchi fritti with whipped smoked salmon and ricotta dip, crispy chickpea fries with aioli, and a rotating assortment of arancini.
Aperitivo hour at both Uva and Cibo will run daily from 2:30 to 5 p.m. Reservations for Cibo can be made via OpenTable or by calling the restaurant, while Uva accepts walk-ins only based on availability.
