The town of Jasper is getting ready to welcome a new concept from attractions and hospitality company Pursuit to its food and beverage scene next month. Terra will aim to offer its guests an experiential dining experience with a focus on regional farm-to-table fare.
In terms of the culinary concept itself, the Terra team has stated that diners can expect to see a mountain-inspired menu with shareable dishes like fried green tomatoes, bone marrow, and candied salmon, along with larger plates like restaurant’s soon-to-be signature ember-hung duck and the reverse-seared bison tomahawk with dandelion chimichurri.
“There is a burgeoning culinary scene within Jasper that is showcasing fresh and modern fare and we are privileged to be part of this vibrant foodie movement,” said Tyler Tays, executive chef, Jasper Lodging, Pursuit. “Terra’s mountain-inspired menu will introduce flavours influenced by nature and carefully crafted with regionally sourced ingredients resulting in dishes that will surprise and delight.”
