Hot on the heels of claiming one of eight Stars doled out during Vancouver’s inaugural Michelin Guide last week, Published on Main recently revealed how it plans to ring in the New Year come December 31, and we think it’s safe to say it will be a night to remember.
Executive chef Gus Stieffenhover-Brandson has crafted a 10-course menu sprinkled with snacks and mignardises, which NYE guests will be able to enjoy alongside wine and beverage pairings, as well as a few optional luxe additions like foie gras, truffle and caviar.
The menu itself is imaginative from top to bottom, with decadent amuse-bouche-style dishes ranging from starters such as scallops with sunchoke barigoule and pine butter to entrees like duck confit ravioli with celeriac, to sweet offerings like chocolate seabuckthorn or yogurt with chervil and elderflower.
“New Year’s Eve is often a celebratory evening, and we wanted to make it extra special this year with an exclusive tasting menu only available on December 31st,” says Published on Main co-founder Cody Allmin. “This menu really speaks to the creative dining journeys our team has created since the inception of our tasting menus. There is a story to be told with each dish, and we hope guests end 2022 on a highnote and kick-start 2023 with a delicious meal.”
Published on Main’s New Year’s Eve menu is priced at $400 per person. Reservations can currently be made online, but tickets are selling fast so we advise securing a spot sooner than later.
