This week, Ancora Waterfront Dining and Patio announced that its annual Caviar Festival will make its long-awaited return to each of its Vancouver locations from November 2 to 22.
Since opening the doors to its first location in 2015, Ancora has been showcasing a creative assortment of highly sought-after caviar from around the globe, highlighted by the signature Peruvian-meets-Japanese style the acclaimed eatery has become known for.
Like previous iterations of the annual festival, both the False Creek and Ambleside locations will be offering a curated a la carte selection of sturgeon caviar comprised of Northern Divine, Osetra, Da Vinci, and Beluga, along with a special Caviar Tasting Series paired with classic caviar accompaniments such as egg yolk, egg white, crème fraÎche, chives, shallots, and buckwheat blinis.
Additionally, False Creek executive chef Sebastian Delgado has also created a special Carabinero Tartar made with Spanish red king prawn marinated in leche de tigre, acevichado sauce, and Northern Divine caviar, while Ambleside executive chef Jorge Kim has prepared a feature appetizer composed of Northern Divine, Ostera, and Da Vinci caviar, six kusshi oysters, cucumber, spicy daikon, and a spicy ponzu sauce.
